What is Colloidal Haze?
Consumers expect most beverages to be clear – and remain clear for the rest of their shelf life. Colloidal haze forms when two substances bond, resulting in molecules large enough to be suspended in the product, causing turbidity. Hazy products are generally considered by consumers as lower quality, and some may perceive them as harmful.
Colloidal hazes in flavors are often based on fusel oils, terpenes, essential oils, polysaccharides and pectin, as well as the group of higher fatty acids and their esters which are extremely important for favour and taste characteristics. These substances of colloidal origin are very often responsible for hazeformation and are characterized by a different solubility in ethanol and/or water.
To meet consumer expectations, colloidal haze removal is a critical step to ensure product perception is at its highest.
Removal of Colloidal Haze
As the most complicated part of flavor processing, it is essential to have the right technology to ensure products are free from turbidity.
As well as chilling the liquid during filtration, technologies combining filtration and adsorption can be very successful.
Filter sheets are uniquely suited to removing not only particles but also the colloidal hazes present in flavor, used ingedients and their blends. They are also capable of achieving sound microbial bioburden reduction, although critical microbial removal is only satisfied by final membrane filters.
SUPRApak™ Plus Modules with Seitz® depth filter media can help achieve a stable product while efficiently removing colloidal haze and are the lead technology to take advantage of the adsorptive capacity which is the key driver for colloidal haze removal in flavors processing.
SUPRApak modules efficiently combine the filtration mechanisms of surface filtration, depth filtration and adsorption. Feed and filtrate channels provide a fluid flow path resulting in maximum utilization of the sheet material and the adsorptive capacity available, to provide highly efficient contaminant removal and a cost-effective enclosed system alternative to flat sheet filtration.
