What is Colloidal Haze?
Consumers expect most beverages to be clear – and remain clear for the rest of their shelf life. Colloidal haze forms when two substances bond, resulting in molecules large enough to be suspended in the product, causing turbidity. Consumers generally conside hazy products as lower quality, and some may perceive them as harmful.
Colloidal hazes in flavors are often based on fusel oils, terpenes, essential oils, polysaccharides, pectins, and the group of higher fatty acids and their esters which are extremely important for favor and taste characteristics. These substances of colloidal origin are very often responsible for haze formation and are characterized by a different solubility in ethanol and/or water.
To meet consumer expectations colloidal haze removal is a critical step to ensure product perception is at its highest.
Removal of flavor colloidal haze
As the most complicated part of flavor processing, it is essential to have the right technology to ensure products are free from turbidity.
As well as chilling the liquid during filtration, technologies combining filtration and adsorption can be very successful.
